I don't remember where I found this recipe for gravy. I first made it two years ago. I love it - it's so easy to make and I usually have these ingredients in my kitchen. It's great for non-Thanksgiving meals too - like biscuits & gravy!

Vegan Gravy:
8 tbls veg oil
3-6 cloves garlic, squashed and minced
3 slices yellow onion, chopped
8 tbls flour
2 tbls nutritional yeast
4 tbls soy sauce
2 1/2 cups water
1/2 tsp ground sage
salt and pepper to taste
1/4 cup red wine
2 tbls balsamic vinegar
6 sliced mushrooms
In a medium saucepan heat oil on medium heat. Add garlic and onion and cook until slightly tender and translucent.
Add the flour, yeast and soy sauce to make a paste or roux. Be careful not to let it burn. Gradually add the water, stirring constantly. With frequent stirring, bring the gravy to a boil and allow it to thicken. Add pepper, mushrooms, red wine and balsamic vinegar.
If the gravy is too thin add a small amount of cornstarch which has been dissolved in some cold water.
