Really, this was an excuse to slather some vegenaise on a baguette. I roasted egglpant slices with olive oil and salt & pepper and then sauteed up button mushrooms. Next, I made a mixture of pressed garlic, fresh julienned basil and vegenaise and spread it on a lightly toasted baguette. And... finally topped it off with half an avocado. Indulgence at its best.
